    Ingredients

    For the Base & Assembly

    • 4 English muffins
    • 1 ½ cups cooked black beans or pinto beans (warm, seasoned lightly with garlic and salt)
    • 1 large ripe avocado, sliced or diced
    • 4 large fresh eggs (for poaching)
    • 1 tbsp white vinegar (for poaching water)
    • Fresh cilantro or chives, chopped, for garnish

    For the Chile Hollandaise

    • 3 large egg yolks
    • 1 tbsp fresh lemon juice
    • ½ cup (1 stick) unsalted butter, melted and warm
    • 1 to 2 tbsp red chile paste (or smooth hot sauce/chipotle-based puree to taste)
    • Salt, to taste

    Directions

    Make the Chile Hollandaise

    1. Whisk the egg yolks and lemon juice vigorously in a heatproof bowl set over a pot of simmering water (a double boiler) until the mixture thickens slightly and becomes pale.

    2. Remove the bowl from the heat. Slowly drizzle in the warm melted butter while whisking constantly until the sauce becomes thick and emulsified.

    3. Whisk in your red chile paste or hot sauce until smooth. Season with a pinch of salt. Set the sauce in a warm spot (not direct heat) while you prepare the rest.

    Poach the Eggs

    1. Fill a wide skillet with a few inches of water and bring it to a gentle simmer. Add a splash of white vinegar.

    2. Crack each egg into a small ramekin or cup. Create a gentle whirlpool in the simmering water with a spoon.

    3. Slip the eggs into the center of the whirlpool one by one. Cook for about 3 to 4 minutes until the whites are set and the yolks remain soft and runny. Remove with a slotted spoon and blot on a paper towel.

Grill the Bread & Warm the Components

    1. Brush your muffin halves lightly with olive oil or butter. Place them on the middle rack of a toaster oven and toast until golden brown.

    2. Warm your seasoned black or pinto beans.

    Assemble the Dish

    1. Place two English muffins on each warm plate.

    2. Spoon a generous portion of the warm savory beans directly over the top of each.

    3. Fan out fresh avocado slices on top of the beans and bread. (Alternatively, these can be fanned out on the side.)

    4. Carefully place the poached eggs over the avocado and beans.

    5. Generously pour the Chile hollandaise over the eggs and muffin stack.

    6. Garnish with chopped fresh herbs and serve immediately.

    Notes

The Double-Boiler Hollandaise Emulsion: Whisking egg yolks and lemon juice over indirect steam gently denatures the yolk proteins without scrambling them. Slowly drizzling in warm butter creates a stable fat-in-water emulsion. The lecithin in the yolks binds the liquid and fat together, resulting in a thick, glossy sauce that perfectly coats the back of a spoon.

Acid-Stabilized Egg Poaching: Adding white vinegar to the poaching water slightly lowers the pH, which accelerates the coagulation of the egg white proteins (ovalbumin). This helps the egg whites set quickly around the yolk rather than feathering out into the water, resulting in a beautifully contained, teardrop-shaped poached egg.

The Whirlpool Method: Creating a gentle vortex in the simmering water before dropping in the egg utilizes centrifugal force to wrap the fluid egg whites cleanly around the heavy yolk, ensuring a neat presentation and a perfectly centered, liquid center.

Flavor-Layered Architecture: Placing the warm, seasoned beans directly onto the toasted muffin allows the bread to absorb the garlic-and-salt-infused moisture without losing its structural integrity. The avocado acts as a cool, buttery barrier that transitions seamlessly into the warm, rich yolk and the smoky, acidic punch of the chile hollandaise.

    Suggested Pairings

Alcohol: The Michelada or Smoky Mezcal Paloma. Non-alcoholic: Cold-brew Iced Horchata Latte or Hibiscus Agua Fresca.
